An assortment of empanadas

Gluten free, Dairy free crust

  • 2 Cups of any 1 to 1 gluten-free flour
  • 1/2 Cup Coconut Oil (chilled), or Shortening
  • 1 Egg
  • 2/3 Cup Water
  • 1/2 Teaspoon Salt
  • 2 Teaspoon Sugar (For sweet empanadas)
  • Freshly grated nutmeg (For sweet empanadas)
  • A sprinkle of more GF flour for dusting

    Instructions

 
  • preheat oven to 425
  • Mix dry ingredients in a large bowl.
  • Add oil or shortening using a pastry blender or fork
  • using a fork, mix in egg
  • Add sugar and nutmeg if making sweet empanadas
  • Measure water out and add to dough one tablespoon at a time until it is able to stick together in a ball
  • Make six balls and flatten with hand or floured plate
  • Add the desired mix inside – either sweet* or savory**
  • Fold seams together by using a fork to crimp the empanada
  • Place on silicone baking mat about 1 inch apart
  • Cook until lightly browned, about 15-18 mins

Sweet filling*

 

Prep: 10 mins

  • cut up 2 cups of peaches or apples into one-inch chunks
  • 1/8 cup granulated sugar
  • 1 tsp cinnamon
  • 1 tsp cornstarch
  • 1/4 cup water

    Instructions

  • Add cornstarch and water to a microwave-safe bowl
  • Mix in the rest of the ingredients
  • Cook on high for 3-5 minutes until thickened

Savory Beef Filling**

Prep: 10 mins

  • 1 lb lean ground beef
  • 4 clovess of minced garlic
  • 2 mediumonions, finely chopped
  • 1 cup of peppers, any color, finely diced
  • 1/2 cup of tomato sauce
  • 1 cup of chicken stock (or 1 tsp of Better than Boiullon + 1 cup of water)
  • 4 sprigs of cilantro, finely chopped
  • 1 tsp mexican oregano
  • 1/2 tspg round cumin

    Instructions

  • Cook ground beef until brown.
  • Add the rest of ingredients for 5-7 mins, until onions are cooked

We solemnly promise to always put the recipe at the top, and blab on later. This has to be one of our biggest pet peeves when looking for new recipes. There you are taking cover behind the kitchen counter getting prepared while dodging plastic and plush projectiles. I’m trying to get to a recipe on my phone not break the enigma code machine. The last thing I want to do is scrooooollllllllll the length of a Tolstoy novel to get to the point. It’s a recipe for food not world peace. Who has that much to say about what they are about to cook? Ok rant over.

These days its easy to get bogged down by real life. Even the standard holidays seem more about commercialism than community. It’s hard to get excited about a holiday when its all you see walking into any store approximately 3 months before that holiday happens. 

We look for reasons to celebrate every day. Sometimes it’s a birthday or holiday or we will google national holidays and discover ones like this: National Empanada day.
